Dear Cauliflower, I Love You!

It is no secret that I love cauliflower, in all forms. I use it as a rice substitute, I like it baked, pureed, I use it in my smoothies and my latest obsession is making it in the air fryer. If you haven’t been introduced to an air fryer yet, then you are missing out. An air fryer is on my top three kitchen appliance must have list. Obviously, a coffee maker and blender/smoothie maker are the other two. When we were in California I had some amazing roasted cauliflower and I wanted to try to recreate it at home. Well, I did and made it even healthier but still amazingly tasty!

You Will Need

1 Head of Cauliflower

Nutritional Yeast

Tahini

Cooking Spray of your choice (Olive Oil, Avocado, Coconut) *you could use an oil mister as substitute*

What To Do

Rough chop cauliflower into medium chunks

Place in air fryer and cover with cooking spray of your choice then sprinkle with nutritional yeast

Set air fryer to 375 degrees and cook for 25 minutes, gently tossing a few times throughout cooking

Drizzle tahini over cauliflower and bake for an additional 5 minutes

Serve and Enjoy!

I love serving this dish with a side of chopped veggies or grilled veggies or having it as an afternoon snack. You could roast tofu or chickpeas with the cauliflower if you are vegetarian or serve as a side dish to a meat option if you are not. There are so many ways to make this dish your own! As you can see I like mine on the crispier side. Cook for less time or at a lower heat for less crisp.
